Sammie Burgers With Homemade Tartar Sauce and Deep Fried Zucchini Rounds
Double Breaded Zucchini Rounds
I made these first, because they take the longest to do
INGREDIENTS:
- 1 large zucchini
- 4-5 tablespoons all-purpose flour
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon Crazy Jane Mixed-Up Salt
- 1 teaspoon garlic powder
- 2 eggs beaten
- Lots of canola oil for frying
DIRECTIONS:
- Cut Zucchini into 1/2 inch medallions and set aside
- I have a deep fryer, so I started heating the oil up to about 350°. If you don't have a deep fryer, use a small pot and heat up 1-2 cups of olive olive oil over medium-low heat. If you don't have a thermometer, you'll know the oil is ready when you throw a little chunk od food in there and it sizzles nicely.
- On a large plate, spread out the flour
- Sprinkle all the seasonings over the flour and mix around with a spoon
- In a small cup, beat the eggs until nice and frothy
- Place the dry zucchini slices into the four and cover on both sides
- Then place them into the egg wash
- Then place them back into the flour and coat a second time
- Throw into the fryer and cook until golden brown
- It took me about 3 batches to cook all the zucchinis
- When done, set aside and start the sammie burgers

I found this recipe on pinterest and used my own salmon burger recipe with it.
INGREDIENTS:
- 1 stalk of celery, finely chopped
- 1/2 cup mayo (I used the olive oil kind)
- 2 teaspoons dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon capers (I didn't chop mine)
- 1 teaspoon Worcestershire Sauce
- 1 tablespoon chopped fresh parsley
- Salt and Pepper to taste

INGREDIENTS:
- 2- 5oz cans of boneless skinless salmon
- 1 stalk green onions, finely chopped
- 1/2 a tablespoon of minced garlic
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Old Bay seasoning
- 1 1/2 tablespoons lemon juice
- 1 egg beaten in a small cup before adding
- Salt and pepper to taste
- 3 tablespoons bread crumbs
- Canola oil for cooking
- Whole grain buns
DIRECTIONS:
- Drain the cans of salmon, and dump in a medium sized bowl
- Chop up the onions and garlic (I used the already minced garlic)
- Mix the onions, garlic, worcestershire, old bay, lemon juice, egg, salt and pepper together until well mixed--but don't mix too much
- Fold in the breadcrumbs last
- Using clean hands, mold the salmon mixture into two large patties. Make them a little larger than you would want, because they will shrink a little during cooking
- In a large pan, heat up about 1 tablespoon canola oil over medium heat
- Once oil is ready, throw the sammie burgers into the pan and cook for about 3-4 minutes on each side
- Serve on a toasted whole wheat bun with homemade tartar sauce and zucchini rounds!
